  • 1 Mixing Bowl
  • 1 9x13 Casserole Dish

Ingredients

  • 12 Eggs, whisked
  • ½ C Feta Cheese Rrumbles
  • ½ C Roasted Red Peppers, diced
  • ½ C Cherry Tomatoes, diced
  • ½ C Kalamata Olives, roughly chopped
  • 3 C Spinach, packed and roughly chopped
  • 1 C Low-fat Cottage Cheese
  • 2 tablespoon Oregano
  • 2 tablespoon Garlic Powder
  • Salt & Pepper to taste
  • Spray oil of choice

Instructions

  • Grease 9x13 pan with spray oil and preheat oven to 375 degrees.
  • Add all ingredients to a large mixing bowl and combine. Pour contents into greased 9 x 13 pan.
  • Bake for 35-40 or until top is golden brown and an inserted fork comes out clean.
