1 Mixing Bowl
1 9x13 Casserole Dish
- 12 Eggs, whisked
- ½ C Feta Cheese Rrumbles
- ½ C Roasted Red Peppers, diced
- ½ C Cherry Tomatoes, diced
- ½ C Kalamata Olives, roughly chopped
- 3 C Spinach, packed and roughly chopped
- 1 C Low-fat Cottage Cheese
- 2 tablespoon Oregano
- 2 tablespoon Garlic Powder
- Salt & Pepper to taste
- Spray oil of choice
Grease 9x13 pan with spray oil and preheat oven to 375 degrees.
Add all ingredients to a large mixing bowl and combine. Pour contents into greased 9 x 13 pan.
Bake for 35-40 or until top is golden brown and an inserted fork comes out clean.
