Mustard Roasted Potatoes

Ingredients

  • 2 lbs potatoes about 6 potatoes, use any type of potato, but reds and yukon gold work best
  • 1 tablespoon extra virgin olive oil
  • 3 tablespoon grainy dijon mustard
  • salt & pepper to taste

Instructions

  • Preheat your oven to 375 degrees fahrenheit. Rinse your potatoes and dice into one-inch cubes. Add potato cubes to a bowl.
  • Coat potatoes in three tablespoons mustard, one tablespoon extra virgin olive oil, and salt and pepper to taste.
  • Spread coated potatoes evenly in a single layer on a sheet pan and cook in the oven for 35-40 minutes. Flip the potatoes halfway through.
  • Potatoes will be done when they cook to a golden brown texture.
  • Serve as a side with your favorite main dish.
