Mustard Roasted Potatoes

- 2 lbs potatoes about 6 potatoes, use any type of potato, but reds and yukon gold work best
- 1 tablespoon extra virgin olive oil
- 3 tablespoon grainy dijon mustard
- salt & pepper to taste
Preheat your oven to 375 degrees fahrenheit. Rinse your potatoes and dice into one-inch cubes. Add potato cubes to a bowl.
Coat potatoes in three tablespoons mustard, one tablespoon extra virgin olive oil, and salt and pepper to taste.
Spread coated potatoes evenly in a single layer on a sheet pan and cook in the oven for 35-40 minutes. Flip the potatoes halfway through.
Potatoes will be done when they cook to a golden brown texture.
Serve as a side with your favorite main dish.
