Easy Cucumber and Carrot Salad
Easy cucumber and carrot salad is crunchy, delicious and packed with nutrients–perfect for your weekly meal prep or an asian side dish.

- 1-2 C Cucumbers, sliced thinly
- 1 C Shredded carrots
- ¼ C Soy sauce or liquid aminos
- ¼ C Rice wine vinegar
- 3 tablespoon Toasted sesame oil
- 2 tablespoon Garlic powder
- 1 tablespoon Onion powder
- Chili crunch, to taste (optional)
- Siracha, to taste (optional)
Thinly slice one whole English cucumber, and carrots (if purchased pre-shredded, skip shredding the carrots), and add to a bowl.
Add all other ingredients to the bowl and mix well.
Cover the salad, and store in the fridge for up to one week.
