    Why we love Cucumber and Carrot Salad

    There are many reasons to love this easy dairy-free and gluten-free cucumber and carrot salad! One of the reasons to love it is all the flavors found in the salad. This crunchy salad combines asian flavors like soy, rice vinegar and sesame oil to pack a flavor punch.

    Another reason we like this salad is how easy it is to make. There are only a few simple steps–no heat or cooking, and this easy cucumber salad is ready. Along with being easy to make, this salad’s flavor also develops the longer you keep it in the fridge–it is the perfect salad for meal prep because it gets better with each serving!

    Carrot and cucumber salad is quick and easy to make, and it’s also extremely cheap. Taking just a cucumber (which is typically less than $2), and a bag of shredded carrots (also around $2), and mixing in some pantry staple seasonings, you can have a delicious and cheap side dish in minutes. 

    Ingredients in Crunchy Cucumber and Carrot Salad

    Cucumber carrot salad is so quick and easy to make–there’s just a handful of ingredients making this the perfect easy meal from the pantry. Here’s what’s included in this healthy cucumber salad: 

    • English Cucumber
    • Shredded carrots–to make the preparation go even quicker, buy shredded carrots
    • Rice Wine Vinegar
    • Toasted Sesame Oil
    • Chili Crunch Oil
    • Sriracha
    • Garlic Powder
    • Onion Powder
    • Everything but the Bagel Seasoning

    Note: I really like to turn up the heat on this recipe and use both sriracha and chili crunch, but you don’t have to do that! Both spices are optional and I recommend adjusting to your desired heat level. 

    How to Make Cucumber Carrot Salad

    This simple carrot salad recipe comes together in just minutes. Here’s the step-by-step guide to this crunchy side salad. 

    • Thinly slice one whole English cucumber, and carrots (if purchased pre-shredded, skip the carrots), and add to a bowl.
    • Add all other ingredients to the bowl and mix well.
    • Cover the ingredients and store in the fridge for up to one week.

    • 1-2 C Cucumbers, sliced thinly
    • 1 C Shredded carrots
    • ¼ C Soy sauce or liquid aminos
    • ¼ C Rice wine vinegar
    • 3 tablespoon Toasted sesame oil
    • 2 tablespoon Garlic powder
    • 1 tablespoon Onion powder
    • Chili crunch, to taste (optional)
    • Siracha, to taste (optional)

    Instructions

    • Thinly slice one whole English cucumber, and carrots (if purchased pre-shredded, skip shredding the carrots), and add to a bowl.
    • Add all other ingredients to the bowl and mix well.
    • Cover the salad, and store in the fridge for up to one week.
