    How to Make Gluten-Free Meatloaf Muffins with Oats

    This gluten-free meatloaf muffin recipe uses oats instead of breadcrumbs and is a fun twist on traditional meatloaf. This recipe is a great meal planning and meal prep recipe and will give you a great weeknight dinner or weekday lunch.

    My husband loves loves loves meatloaf. According to him, he did not like breakfast foods for breakfast as a child, but preferred meals like spaghetti, steak, or meatloaf first thing in the morning.. I asked him last year what meal did he miss that he would like me to make. 

    He immediately said meatloaf. 

    Why We Love Meatloaf Muffins

    If you’re looking for a gluten free meatloaf recipe, this one is a great option.Meatloaf is a pretty simple dish to make by nature. Add all your ingredients together, mix with your hands, and bake in the oven. Boom. Dinner or meal prep is done.

    Making meatloaf as a gluten-free muffin by using oats and a muffin tin gives you meal planning options for an entire week. These meatloaf muffins also freeze well. 


    This recipe is no different, but is switched up just a bit. First, the recipe calls for oats instead of breadcrumbs making it gluten-free. Also instead of baking in a big pan, this recipe is cooked in a muffin tin, so you can easily perfectly portion your meal to fit you and your needs.

    Ingredients in Gluten-Free Meatloaf Muffins

    Ground Meat I’ve mentioned previously that we prefer to buy our beef locally from local farmers and ranchers instead of from the grocery store. The benefits to buying beef directly from a farmer and rancher include directly financially supporting that rancher and their family, knowing exactly where your meat is coming from, and less commercial processing of the meat. 

    We love the beef we get from SoDak Family Beef. Their customer service is amazing; we live about 100 miles from their farm, yet they still deliver to us. So convenient and beneficial to us!

    This gluten free meatloaf recipe is versatile–you can use any ground meat you’d like. This recipe also works well as a gluten-free ground turkey meatloaf, or ground chicken meatloaf.

    Other Ingredients in Meatloaf Muffins

    Onion and Garlic This recipe calls for dried onion and garlic powder. Both are pantry staples that can be found for less than a dollar at the grocery store, but if you want to use fresh ingredients, finely diced onion and minced garlic they will taste great as well. 

    Worcestershire and Soy Sauce Worcestershire sauce and soy sauce add great flavor and depth to these meatloaf muffins. This recipe calls for two tablespoons of each, but that can be adjusted to your liking. 

    Oats and Egg Meatloaf needs a binder and the combination of oats and eggs are perfect for that role. To make oat flour, you can use a Magic Bullet--we have this one--or any other blender or food processor. This recipe calls for just one egg. 

    How to Make Gluten-Free Meatloaf Muffins

    Gluten-free meatloaf muffins are super easy to make. Combine all the ingredients together in a large mixing bowl, making sure all are well combined.

    Using your hands shape mixture into balls, about the size of your hand, and place in a muffin tin. Top with more ketchup before baking.

    Paper muffin liners are not needed for this recipe, but a non-stick muffin tin like this one is good to use.

    Bake for 30 minutes at 350 degrees. 

    Storing Meatloaf Muffins

    If you’re making these gluten-free meatloaf muffins for meal prep, you can just store them in a glass container or reusable storage bags. We use these glass containers and these reusable bags. These muffins will last up to seven days in your refrigerator. 

    Freezing Individual Meatloaf 

    These gluten-free meatloaf muffins are a great long-term meal prep option as well. To freeze, I wrap two in parchment paper, then place in a large freezer zipper top storage bag. These will last three months in the freezer stored this way.
    These pair well with so many sides--rice, noodles, or potato--whatever works for you!
